Homemade Banana Pudding

Sweet tooth alert! One of my goals is to take the fear away from beginner cooks that shy away from “homemade” and “from scratch” recipes. It’s not as hard as you think! I believe in you! You can do it! I’m here to help. Take this banana pudding. No box of of pudding mix necessary.banana-pudding It just breaks my heart to see people buying that “banana pudding” from the deli at grocery stores. It’s literally banana pudding. It’s instant banana cream flavored pudding mix and vanilla wafer. The devil is busy!! That’s why i’m sharing this with my Cookies. Don’t settle for less out of fear. I promise my version is super easy. Watch me whip it up…

Homemade Banana Pudding

Ingredients
  1. 3-4 bananas
  2. 3/4 cup of sugar
  3. 3 egg yolks
  4. 1 tablespoon cornstarch
  5. 3 cups of milk
  6. 3 tablespoons salted butter
  7. splash of pure vanilla extract
  8. 1 pkg cream cheese, softened
  9. 2 tablespoons of lemon juice
  10. 1-2 pkgs vanilla wafers
  11. 1 tub of cool whip
Instructions
  1. Mix sugar, cornstarch, and egg yolks well
  2. Add to a heavy bottomed saucepan
  3. Whisk in milk slowly on medium heat
  4. Add butter
  5. Continue whisking and bring mixture to a simmer
  6. When it starts to thicken turn off the heat
  7. Add extract and cream cheese
  8. Whisk until smooth
  9. Allow to cool for 20 mins.
  10. Slice bananas and toss in lemon juice
  11. Layer in a dish or bowl starting with cookies and ending with cool whip
  12. Refrigerate for at least 3 hours
  13. Enjoy!

Cheesy Broccoli And Rice Casserole

I refuse to call this a casserole. I just hate that term. Don’t ask why. Y’all know I’m weird. But, it’s rainy and I’m hungry! This is fast and yummy! I know, I know, there are a million variations of this. I make it many ways. This one is my favorite and I know it will be yours as well.

 You can add cooked chicken and make it a one skillet meal. And those that have been asking for more low carb options, you can 86 the rice, throw some cauliflower in a food processor, and sub that for the rice. You’re welcome. And I love you more.

Cheesy Broccoli and Rice

Ingredients
  1. 2 cups of cooked rice
  2. 1 16 oz pk of frozen cut broccoli (thawed)
  3. 1 small diced onion
  4. 2 tablespoons butter or olive oil
  5. 1 T minced garlic
  6. 2 (10 oz) cans cream of mushroom or chicken soup
  7. 3/4 cup sour cream
  8. 1 T ranch dry seasoning
  9. 1 T mayo
  10. 2 cups shredded sharp cheddar cheese
  11. 1/4 cup milk
  12. onion & garlic powder to taste
  13. salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F
  2. Melt butter or add oil to your pot
  3. Saute onions until translucent
  4. Add garlic and saute for 30 secs
  5. Add broccoli
  6. Saute for 5 mins
  7. Add cream of mushroom or cream of chicken soup
  8. Stir in the cooked rice
  9. Add the ranch mix, sour cream, mayo garlic, and onion powders. Stir well.
  10. Season to taste with salt and pepper
  11. Stir in 1 cup of cheese
  12. Add the milk and stir to combine
  13. Butter a 9x13 dish and pour in the mixture
  14. Sprinkle remaining cheese on top
  15. Bake until cheese melts
  16. Enjoy!

Summer Salad + Homemade Strawberry Vinaigrette

I needed some freshness in my life. Organic greens, ripe berries, you know, the feel good power food! Plus, it’s too hot to even look at the stove let alone turn the thing on! So I made this bowl of pure, guilt free goodness! summer-salad

Oh, there’s a homemade, Strawberry Balsamic Vinaigrette that make you turn your nose up to the salad dressing aisle at Walmart. Watch and get yo blessing, chile!

Ingredients
  1. 1 cup sliced strawberries
  2. 1/4 cup extra virgin olive oil
  3. 2 tablespoons balsamic vinegar
  4. 3 tablespoons raw honey
  5. 1 teaspoon dried thyme
  6. Salt and pepper to taste
Instructions
  1. Throw all of that stuff up there in a blender or food processor.
  2. Blend.
  3. Done!
  4. Enjoy!!

Cheese Steak Egg Rolls

Something different for my Cookies today! Cheese steak egg rolls! Not Philly cheese steaks, though. I’m from Louisiana, so I don’t want the good folks in Philly getting mad at the kid for jacking up their cheese steaks. So, these are B. Coop’s cheese steak egg rolls!! Perfect appetizer for foot ball season! Serve them with Southwest Ranch like I did or your favorite dipping sauce. Watch me make them…..

Cheese Steak Egg Rolls

Ingredients
  1. 2 lbs Sirloin Steak thinly cut
  2. 1 bell pepper
  3. 1 onion
  4. 1 package of egg roll wrappers
  5. 15-20 slices of Provolone cheese
  6. 1/2 cup water
  7. 2 tablespoons olive oil
  8. 1 tablespoon of butter
  9. vegetable oil for frying
  10. Salt, pepper, and garlic powder to taste
Instructions
  1. Freeze steak for 30 mins prior to slicing
  2. Slice onion and bell pepper thinly
  3. Toss veggies in olive oil and sprinkle with salt
  4. Saute until translucent and caramelized
  5. Slice steak and add to the skillet with the veggies
  6. Add butter to steak
  7. Sear until done
  8. Assemble egg rolls, use the water to seal
  9. Fry in oil heated at 350 degrees for 3-4 mins
  10. Enjoy!
